Description

A delicious way to use leftover sourdough starter, combining ripe bananas with the tangy flavor of sourdough for a moist and flavorful bread.


Ingredients

  • 1 cup sourdough discard
  • 2 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine the mashed bananas, sourdough discard, sugar, melted butter, egg, and vanilla extract. Mix well.
  3. In another bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For added richness, consider incorporating nuts, chocolate chips, or dried fruits.
