Ingredients

  • 680 g (1.5 lbs) boneless, skinless chicken breasts or thighs
  • 245 g (1 cup) full-fat plain yogurt
  • Juice of 1 lemon
  • 2 cloves minced garlic
  • 1 tsp paprika
  • ½ tsp cumin
  • ¼ tsp cayenne
  • 1 tsp salt
  • Wooden or metal skewers

Instructions

  1. Prepare the marinade: In a medium bowl, combine yogurt, lemon juice, garlic, paprika, cumin, cayenne, and salt. Whisk until smooth.
  2. Cut the chicken into bite-sized pieces and add them to the yogurt marinade. Ensure all pieces are well-coated. Cover and refrigerate for at least 8 hours or overnight.
  3. Preheat your grill to medium-high heat (about 200°C / 400°F) or your oven to 200°C (400°F), and line a baking sheet with parchment paper.
  4. Thread the marinated chicken onto skewers, leaving space between each piece for even cooking.
  5. Cook the skewers: Grill for about 15 minutes, turning occasionally, or bake for the same amount of time, flipping halfway through until the chicken reaches 74°C (165°F).
  6. Remove the skewers from the grill or oven and let them rest for a few minutes before serving.

Notes

Let the chicken marinate overnight for the best flavor. Avoid overcooking to prevent drying out.
