Ingredients

  • 680 g (1.5 lbs) boneless, skinless chicken breasts or thighs
  • 245 g (1 cup) full-fat plain yogurt
  • Juice of 1 lemon
  • 2 cloves minced garlic
  • 1 tsp paprika
  • ยฝ tsp cumin
  • ยผ tsp cayenne
  • 1 tsp salt
  • Wooden or metal skewers

Instructions

  1. Prepare the marinade: In a medium bowl, combine yogurt, lemon juice, garlic, paprika, cumin, cayenne, and salt. Whisk until smooth.
  2. Cut the chicken into bite-sized pieces and add them to the yogurt marinade. Ensure all pieces are well-coated. Cover and refrigerate for at least 8 hours or overnight.
  3. Preheat your grill to medium-high heat (about 200ยฐC / 400ยฐF) or your oven to 200ยฐC (400ยฐF), and line a baking sheet with parchment paper.
  4. Thread the marinated chicken onto skewers, leaving space between each piece for even cooking.
  5. Cook the skewers: Grill for about 15 minutes, turning occasionally, or bake for the same amount of time, flipping halfway through until the chicken reaches 74ยฐC (165ยฐF).
  6. Remove the skewers from the grill or oven and let them rest for a few minutes before serving.
