These Classic Cherry Muffins combine sweet and tart cherries with a light, fluffy texture. Perfect for breakfast or a snack.

- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cherries, pitted and halved
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the melted butter, egg, milk, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the cherries.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
For best flavor, use fresh cherries. Frozen cherries work as well; just thaw and drain them.
