- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- 1 handful of spinach (about 1 cup chopped)
Instructions
- Wash and finely chop about one cup of fresh spinach leaves.
- In a large bowl, whisk together the all-purpose flour, baking powder, salt, and sugar.
- In a separate bowl, beat the egg and add the milk and melted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the chopped spinach.
- Warm a non-stick skillet over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2-3 minutes until bubbles form, then flip and cook another 1-2 minutes.
- Transfer cooked pancakes to a serving plate and serve immediately with your favorite toppings.
