- 1 pound gnocchi
- 2 tablespoons olive oil
- 1 pound salmon fillet, skin removed
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook gnocchi according to package directions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Season salmon with salt and pepper and add to the skillet. Cook for about 5 minutes per side, or until cooked through. Remove from skillet and flake into pieces.
- In the same skillet, add minced garlic and sauté for about 1 minute.
- Pour in the heavy cream and stir, bringing it to a gentle simmer.
- Add spinach and cook until wilted.
- Stir in the cooked gnocchi and flaked salmon, mixing evenly.
- Incorporate the Parmesan cheese until melted and fully combined.
- Adjust seasoning with salt and pepper if needed.
- Serve warm, garnished with parsley if desired.
