A delightful dish combining tender gnocchi and flaky salmon in a rich, creamy sauce, perfect for a quick weeknight dinner.


Ingredients

  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 1 pound salmon fillet, skin removed
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook gnocchi according to package directions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season salmon with salt and pepper and add to the skillet. Cook for about 5 minutes per side, or until cooked through. Remove from skillet and flake into pieces.
  4. In the same skillet, add minced garlic and sauté for about 1 minute.
  5. Pour in the heavy cream and stir, bringing it to a gentle simmer.
  6. Add spinach and cook until wilted.
  7. Stir in the cooked gnocchi and flaked salmon, mixing evenly.
  8. Incorporate the Parmesan cheese until melted and fully combined.
  9. Adjust seasoning with salt and pepper if needed.
  10. Serve warm, garnished with parsley if desired.

Notes

Best served warm and can be paired with a light salad or steamed vegetables.
