A quick and hearty Italian Sausage Tortellini Soup that’s perfect for weeknight dinners.
Ingredients

- 1 lb Italian sausage (pork or turkey)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup cheese-filled tortellini (fresh or frozen)
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Prep & mise en place: Chop onion, mince garlic, measure broth, open tomatoes, portion tortellini, wash spinach.
- Brown the sausage: In a large pot, heat olive oil over medium heat. Add Italian sausage and brown it, breaking it into pieces.
- Build aromatics: Once browned, add diced onion and sauté until translucent, then add minced garlic and cook until fragrant.
- Add liquids & tomatoes: Pour in chicken broth and the diced tomatoes. Stir to combine.
- Season & simmer: Season with Italian seasoning, salt, and pepper. Bring to a gentle boil, then reduce to a simmer.
- Add tortellini: Add the tortellini and cook according to package instructions.
- Finish with greens & cheese: Stir in the spinach and cook until wilted. Serve hot topped with grated Parmesan.
Notes
Feel free to customize with different sausages or greens. Add a splash of lemon to brighten the broth if desired.
