Description

A delicious and hearty casserole featuring bagels, sausage, cheese, and an egg custard base, perfect for feeding a crowd.


Ingredients

  • 68 day-old bagels, cubed
  • 1 lb pork breakfast sausage
  • 2 cups whole milk or half-and-half
  • 8 large eggs
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 23 cups shredded cheese (cheddar, American, or similar)
  • Salt and pepper to taste
  • Optional: herbs and spices (chives, parsley, mustard powder, smoked paprika)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. Brown the sausage in a skillet, breaking it into small bits and draining most of the fat.
  3. Sautรฉ onion and bell pepper in the rendered sausage fat until translucent.
  4. In a large bowl, whisk together eggs, milk, salt, and pepper.
  5. Layer half of the bagel cubes in a 9ร—13 baking pan.
  6. Add half of the sausage mixture and half of the cheese.
  7. Repeat with the remaining bagels, sausage, and cheese.
  8. Pour the egg custard evenly over the casserole, pressing gently to help the bagels absorb the liquid.
  9. Top with reserved cheese or seasoning if desired.
  10. Bake uncovered for 35-45 minutes, until the center is set and the top is golden.
  11. Let the casserole rest for 10-15 minutes before slicing.

Notes

For best texture, use day-old or slightly toasted bagels. Allow the casserole to rest before slicing for cleaner cuts.
