- 6–8 day-old bagels, cubed
- 1 lb pork breakfast sausage
- 2 cups whole milk or half-and-half
- 8 large eggs
- 1 cup diced onion
- 1 cup diced bell pepper
- 2–3 cups shredded cheese (cheddar, American, or similar)
- Salt and pepper to taste
- Optional: herbs and spices (chives, parsley, mustard powder, smoked paprika)
Instructions
- Preheat oven to 350ยฐF (175ยฐC).
- Brown the sausage in a skillet, breaking it into small bits and draining most of the fat.
- Sautรฉ onion and bell pepper in the rendered sausage fat until translucent.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Layer half of the bagel cubes in a 9ร13 baking pan.
- Add half of the sausage mixture and half of the cheese.
- Repeat with the remaining bagels, sausage, and cheese.
- Pour the egg custard evenly over the casserole, pressing gently to help the bagels absorb the liquid.
- Top with reserved cheese or seasoning if desired.
- Bake uncovered for 35-45 minutes, until the center is set and the top is golden.
- Let the casserole rest for 10-15 minutes before slicing.
Notes
For best texture, use day-old or slightly toasted bagels. Allow the casserole to rest before slicing for cleaner cuts.
