  • 4 cloves garlic (minced)
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Heat olive oil over medium heat in a large skillet. Add minced garlic and sauté until fragrant.
  3. Add the shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side.
  4. Stir in the diced tomatoes (with juices) and heavy cream; bring this mixture to a simmer.
  5. Add the Parmesan cheese and stir until melted and well combined.
  6. Season with salt and pepper to taste.
  7. Toss the cooked pasta with the shrimp and sauce until everything is well coated.

Notes

Make sure not to overcook the shrimp; they cook quickly and should be removed from the heat as soon as they turn pink. Experiment with different types of pasta or add a hint of spice with red pepper flakes.
