Description

A delightful twist on traditional potato salad that combines creamy mayonnaise, tangy dill pickles, and crispy bacon for an unforgettable flavor.

Ingredients

Scale
  • 2 pounds potatoes
  • 1 cup beef bacon, cooked and chopped
  • 1 cup dill pickles, diced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender. Drain and let cool before dicing.
  2. Combine the diced potatoes, chopped beef bacon, and diced pickles in a large bowl.
  3. Mix together the mayonnaise, sour cream, Dijon mustard, chopped dill, salt, and pepper in a separate bowl.
  4. Pour the dressing over the potato mixture and gently fold until well combined.
  5. Chill in the refrigerator for at least 60 minutes before serving. Enjoy!

Notes

Make sure to let the potatoes cool completely before dicing to prevent a mushy texture. Adjust pickle amount based on your taste preference for tanginess.
