  • 1/4 cup plain Greek yogurt
  • 6 cloves garlic, chopped
  • 2 tablespoons fresh grated ginger
  • 2 tablespoons garam masala
  • 2 teaspoons cumin
  • 1 teaspoon turmeric
  • 12 teaspoons cayenne pepper
  • salt and black pepper, to taste
  • 4 tablespoons salted butter
  • 1 large yellow onion, chopped
  • 1 can (14 ounce) full-fat coconut milk
  • 1/2 cup tomato paste
  • 2 tablespoons cold, salted butter, sliced
  • 2 tablespoons sesame seeds
  • 1/2 cup fresh cilantro, chopped
  • steamed rice or naan
  • 1 teaspoon chili flakes (optional)
  • 1/2 teaspoon paprika

Instructions

  1. In a baking dish, toss together the chicken, yogurt, garlic, ginger, garam masala, cumin, turmeric, cayenne pepper, and 1 teaspoon of salt. Let this marinate for about 5 minutes to enhance the flavors.
  2. Preheat your oven to 400°F.
  3. Add the chopped onion to your marinated chicken. Pour over the full-fat coconut milk and stir in the tomato paste until creamy and well-mixed. Arrange the butter slices on top and sprinkle with sesame seeds.
  4. Place your prepared dish in the oven and bake for 30-40 minutes.
  5. Melt the remaining butter with chili flakes and paprika in a small saucepan. Cook until fragrant and slightly browned.
  6. Serve the chicken and sauce over bowls of rice, drizzling with the chili butter and accompanied by naan.
