- 500 g boneless chicken thighs
- 60 g miso paste
- 1 tablespoon fresh ginger, minced
- 3 cloves garlic, minced
- 1 liter chicken broth
- 30 g spicy chili paste
- 200 g mixed vegetables (e.g., bok choy, carrots)
- 2 teaspoons sesame oil
Instructions
- Prepare your ingredients first.
- Heat 1 tablespoon of sesame oil in a large pot over medium heat for about 2 minutes.
- Add minced garlic and ginger, and sautรฉ for 2-3 minutes until fragrant and golden.
- Put in the chicken thighs, cooking for 5 minutes until browned.
- Pour in the chicken broth and mix miso paste with warm broth until smooth, then stir it in.
- Add your choice of sliced vegetables and spicy chili paste, bringing the broth to a gentle boil.
- Let it simmer for 10-15 minutes until the chicken is cooked through.
- Remove chicken, shred it, and return to the pot. Taste and adjust seasoning before serving.
Notes
For a lighter version, use skinless chicken breasts and reduce cooking time slightly.
