A fresh and flexible Mediterranean Veggie Salad that can be made in just 15 minutes, perfect for any meal or a picnic.
Ingredients

- 1 cucumber, diced
- 2 tomatoes, diced
- 1 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and chopped
- 3 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- Optional: Feta cheese, crumbled
- Optional: Fresh herbs (parsley, basil, mint)
Instructions
- Gather all ingredients and tools.
- Dice cucumber and tomatoes, slice onion thinly, and chop olives if large.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- In a large bowl, combine the diced vegetables and pour the dressing over them.
- Toss gently to coat everything without bruising the vegetables.
- Serve immediately or chill for 30 minutes to allow flavors to meld.
- Adjust seasoning at the table with additional herbs or feta as desired.
Notes
For extra protein, consider adding canned chickpeas or grilled chicken. Use seasonal vegetables for the freshest flavor.
