  • 3 large eggs
  • 1 tsp vanilla extract
  • ยฝ cup buttermilk

  • ยฝ cup heavy cream (for frosting)
  • 1 tbsp matcha powder (for frosting)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a cupcake pan with paper liners.
  2. Whisk together flour, sugar, baking powder, baking soda, salt, and matcha in a large bowl.
  3. Beat softened butter until creamy in a separate bowl, then add eggs one at a time along with vanilla, mixing well.
  4. Gradually add the dry mix to the wet ingredients, alternating with buttermilk, mixing until just combined.
  5. Divide batter among cupcake liners, filling each about two-thirds full, and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat softened butter until creamy, then gradually add powdered sugar, heavy cream, matcha, and vanilla, mixing until fluffy.
  8. Frost the cooled cupcakes as desired.

Notes

For a lighter option, use whipped cream instead of buttercream for frosting.
