Description
These lemon crumb bars feature a buttery, slightly salty crust topped with a tangy lemon filling and a crisp crumb topping, perfect for gatherings or a cozy treat.

- 1 3/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1 stick (8 tbsp) cold butter, cut into pieces
- 1 cup granulated sugar (for filling)
- 2 large eggs
- 1/2 cup fresh lemon juice
- Zest of 1–2 lemons
- 1/4 cup all-purpose flour (for filling)
- 1/2 tsp baking powder (for filling)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan, or line with parchment paper.
- In a medium bowl, combine 1 3/4 cups flour, 3/4 cup sugar, 1/4 tsp salt, and 1/2 tsp baking powder. Add the cold butter and cut it into the flour mixture until it resembles coarse crumbs.
- Reserve about 1 cup of the crumb mixture for the topping. Firmly press the remaining mixture into the bottom of the prepared pan to form the crust.
- In a separate bowl, whisk together 1 cup sugar, 2 eggs, 1/2 cup lemon juice, lemon zest, 1/4 cup flour, and 1/2 tsp baking powder until smooth.
- Pour the lemon filling over the crust and sprinkle the reserved crumb mixture on top.
- Bake for 25–30 minutes until golden and set. A toothpick should come out mostly clean.
- Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before cutting into squares.
Notes
Chill the pan for 30 minutes before slicing to get tidy edges.
