Ingredients

  • 250 g (2 cups) sushi rice
  • 500 ml (2 cups) water
  • 4 sheets nori (seaweed)
  • 100 g (3.5 oz) prosciutto
  • 150 g (5 oz) fresh mozzarella
  • Fresh basil leaves
  • Extra virgin olive oil

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water and cook according to instructions.
  2. Slice prosciutto into thin pieces and cut mozzarella into sticks.
  3. Lay nori on bamboo mat and spread sushi rice over it, leaving a border.
  4. Place prosciutto, mozzarella, and basil in the center of the rice.
  5. Roll the nori tightly while applying gentle pressure.
  6. Slice the roll into 8-10 pieces with a sharp knife.

Notes

Avoid overstuffing rolls and make ahead for convenience. Best enjoyed fresh.
