- 4 chicken thighs
- 1 lb (450g) potatoes, halved
- 1 can (14 oz) crushed tomatoes
- 2 tbsp extra virgin olive oil
- 1 tbsp dried rosemary
- 1 tbsp dried thyme (or oregano)
- 3 cloves garlic, minced
- 2 tbsp red wine vinegar (or white wine vinegar)
- Salt and black pepper to taste
- 1 cup shredded mozzarella cheese (optional)
Instructions
- Preheat your oven to 350°F (180°C).
- In a bowl, mix rosemary, thyme, minced garlic, vinegar, olive oil, salt, and pepper to create the dressing.
- Parboil or microwave potatoes for about 5 minutes until slightly undercooked.
- Season chicken thighs with salt and pepper, then brown them in a skillet with olive oil for about 5 minutes per side.
- Remove excess fat from the skillet, arrange potatoes around chicken, pour crushed tomatoes over, and drizzle with the dressing.
- Bake for 25 to 30 minutes.
- Sprinkle mozzarella on top and bake for an additional 5 minutes until cheese is melted and golden.
- Let it rest for 10 minutes before serving.
