Ingredients

  • 4 chicken thighs
  • 1 lb (450g) potatoes, halved
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp extra virgin olive oil
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme (or oregano)
  • 3 cloves garlic, minced
  • 2 tbsp red wine vinegar (or white wine vinegar)
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a bowl, mix rosemary, thyme, minced garlic, vinegar, olive oil, salt, and pepper to create the dressing.
  3. Parboil or microwave potatoes for about 5 minutes until slightly undercooked.
  4. Season chicken thighs with salt and pepper, then brown them in a skillet with olive oil for about 5 minutes per side.
  5. Remove excess fat from the skillet, arrange potatoes around chicken, pour crushed tomatoes over, and drizzle with the dressing.
  6. Bake for 25 to 30 minutes.
  7. Sprinkle mozzarella on top and bake for an additional 5 minutes until cheese is melted and golden.
  8. Let it rest for 10 minutes before serving.

Notes

You can customize with different herbs or add vegetables like green beans or bell peppers.
