A refreshing Summer Pasta Salad with vibrant vegetables and a zesty cilantro-lime dressing, perfect for warm days and gatherings.
Ingredients

- 250 g (8 oz) pasta
- 200 g (1ยฝ cups) cherry tomatoes, diced
- 1 medium cucumber, sliced
- ยฝ red onion, finely chopped
- ยฝ cup chopped cilantro
- 60 ml (ยผ cup) lime juice
- 60 ml (ยผ cup) olive oil
- Salt and pepper, to taste
Instructions
- Boil a large pot of salted water. Add pasta and cook until al dente, about 8โ10 minutes.
- Chop the vegetables and add them to a large mixing bowl.
- Whisk together lime juice, olive oil, salt, and pepper in a small bowl. Stir in cilantro until combined.
- Drain the pasta and rinse it under cold water. Add to the mixing bowl with vegetables.
- Pour the dressing over the salad and toss everything together.
- Taste and adjust seasoning as needed.
- Let the salad sit for at least 15 minutes before serving.
Notes
Best to store the dressing separately if made in advance to prevent soggy pasta.
