Description

This creamy pasta salad recipe is delicious and easy to make, perfect for picnics or a quick weeknight dinner.


Ingredients

  • 250 g (2 cups) fusilli or rotini pasta
  • 150 g (1 cup) cherry tomatoes, halved
  • 100 g (1 cup) diced cucumber
  • 120 ml (½ cup) mayonnaise
  • 60 g (¼ cup) Greek yogurt or sour cream
  • 15 ml (1 tablespoon) lemon juice
  • Salt and pepper to taste
  • Fresh herbs (parsley or dill), optional

Instructions

  1. Bring 1.5 liters (6 cups) of salted water to a boil. Add pasta and cook for 8-10 minutes or until al dente. Drain and rinse under cold water.
  2. Chop cherry tomatoes and cucumber, placing them in a large mixing bowl.
  3. Whisk together mayonnaise, Greek yogurt, and lemon juice in another bowl. Season with salt and pepper.
  4. Add the drained pasta to the bowl with vegetables. Pour dressing over the top and toss gently.
  5. Cover the salad with plastic wrap and refrigerate for at least 30 minutes before serving.

Notes

This salad can be made a day in advance. Dress it right before serving to prevent sogginess.
