Description
This creamy pasta salad recipe is delicious and easy to make, perfect for picnics or a quick weeknight dinner.
Ingredients

- 250 g (2 cups) fusilli or rotini pasta
- 150 g (1 cup) cherry tomatoes, halved
- 100 g (1 cup) diced cucumber
- 120 ml (½ cup) mayonnaise
- 60 g (¼ cup) Greek yogurt or sour cream
- 15 ml (1 tablespoon) lemon juice
- Salt and pepper to taste
- Fresh herbs (parsley or dill), optional
Instructions
- Bring 1.5 liters (6 cups) of salted water to a boil. Add pasta and cook for 8-10 minutes or until al dente. Drain and rinse under cold water.
- Chop cherry tomatoes and cucumber, placing them in a large mixing bowl.
- Whisk together mayonnaise, Greek yogurt, and lemon juice in another bowl. Season with salt and pepper.
- Add the drained pasta to the bowl with vegetables. Pour dressing over the top and toss gently.
- Cover the salad with plastic wrap and refrigerate for at least 30 minutes before serving.
Notes
This salad can be made a day in advance. Dress it right before serving to prevent sogginess.
