Ingredients

- 3 ripe bananas
- 250 g (2 cups) all-purpose flour
- 150 g (3/4 cup) brown sugar
- 100 g (1/2 cup) semi-sweet chocolate chips
- 2 large eggs
- 60 ml (1/4 cup) vegetable oil
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 180ยฐC (350ยฐF).
- Mash the ripe bananas in a large bowl.
- Add eggs and vegetable oil to the mashed bananas and whisk together.
- Mix the flour, baking soda, baking powder, and salt in a separate bowl.
- Combine the dry ingredients with the wet mixture.
- Fold in the chocolate chips.
- Scoop the batter into a prepared muffin tin.
- Bake for 18-22 minutes or until golden brown.
- Cool in the tin for 5 minutes before transferring to a wire rack.
Notes
Avoid overmixing to prevent dense muffins. You can prepare the batter the night before and refrigerate it.
