Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, add pasta, and cook until al dente, about 8โ€“10 minutes. Reserve 1 cup of pasta water, then drain.
  2. Prepare the Spinach Sauce: In a skillet, heat olive oil over medium heat, add minced garlic, and sautรฉ until fragrant, about 1โ€“2 minutes. Add fresh spinach and cook until wilted, about 3โ€“4 minutes.
  3. Blend the Sauce: Transfer spinach and garlic mixture to a blender, add reserved pasta water, and blend until smooth. Adjust for creaminess with additional water if needed.
  4. Toss Pasta with Sauce: In the skillet, combine drained pasta with spinach sauce, stir over low heat for 1โ€“2 minutes. Add more pasta water if necessary for a smooth consistency.
  5. Serve and Garnish: Serve immediately, garnishing with grated Parmesan cheese and a sprinkle of black pepper.

Notes

Avoid overcooking the pasta for the best texture. Make the spinach sauce ahead of time for quick assembly.
