- 1 diced bell pepper
- 2 minced garlic cloves
- 300 g (about 3 cups) ditalini pasta
- 4 cups (960 ml) vegetable or chicken broth
- 100 g (1 cup) freshly grated Parmesan cheese
Instructions
- Heat the oil in a large pot over medium heat until shimmering.
- Sautรฉ the vegetables until the pepper is tender and garlic is fragrant, about 3โ4 minutes.
- Add the ditalini pasta and broth, bringing the mixture to a boil.
- Reduce the heat to low and simmer uncovered for 10โ12 minutes, stirring occasionally.
- Finish by stirring in the Parmesan cheese until creamy, then season with salt and pepper to taste, and serve immediately.
Notes
