- 250 g (2 cups) elbow macaroni
- 120 g (ยฝ cup) mayonnaise
- 120 g (ยฝ cup) Greek yogurt
- 100 g (1 cup, diced) celery
- 50 g (ยฝ cup, finely chopped) red onion
- 100 g (1 cup, diced) bell pepper
- 30 ml (2 tablespoons) apple cider vinegar
- Salt and pepper to taste
Instructions
- Bring a medium pot of salted water to a boil. Add the macaroni and cook until al dente, about 8-10 minutes. Drain and rinse under cold water to stop cooking. Let cool.
- In a large mixing bowl, combine mayonnaise, Greek yogurt, and apple cider vinegar. Whisk until smooth.
- Finely chop the celery, red onion, and bell pepper. Add to the bowl with dressing.
- Add the cooled macaroni to the dressing and vegetables. Stir to coat. Season with salt and pepper.
- Refrigerate the salad for at least 30 minutes before serving for best flavor.
Notes
