Description

Ingredients

  • 250 g (2 cups) elbow macaroni
  • 120 g (ยฝ cup) mayonnaise
  • 120 g (ยฝ cup) Greek yogurt
  • 100 g (1 cup, diced) celery
  • 50 g (ยฝ cup, finely chopped) red onion
  • 100 g (1 cup, diced) bell pepper
  • 30 ml (2 tablespoons) apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Bring a medium pot of salted water to a boil. Add the macaroni and cook until al dente, about 8-10 minutes. Drain and rinse under cold water to stop cooking. Let cool.
  2. In a large mixing bowl, combine mayonnaise, Greek yogurt, and apple cider vinegar. Whisk until smooth.
  3. Finely chop the celery, red onion, and bell pepper. Add to the bowl with dressing.
  4. Add the cooled macaroni to the dressing and vegetables. Stir to coat. Season with salt and pepper.
  5. Refrigerate the salad for at least 30 minutes before serving for best flavor.

Notes
