Ingredients

  • 4 cups mixed greens (such as romaine, spinach, and arugula)
  • 4 slices bacon, cooked and crumbled
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup blue cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Season the shrimp with salt and pepper, then grill for 2-3 minutes on each side until they are opaque and cooked through.
  2. In a large bowl, combine the mixed greens, avocado, cherry tomatoes, bacon, blue cheese, and red onion.
  3. In a small bowl, whisk together the olive oil and lemon juice, then season with salt and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
