- 1 tbsp sugar

- 3โ4 ripe but firm pears, peeled and sliced 1/4-inch
- 1/3 cup sugar
- 1 tbsp flour or 2 tsp cornstarch
- 2 tbsp minced crystallized ginger
- 1 tbsp lemon juice
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- 1 egg, beaten with 1 tbsp water (for egg wash)
- Coarse sugar for sprinkling (optional)
Instructions
- Prepare the crust: In a medium bowl, whisk together flour, sugar, and salt. Cut in cold butter until coarse crumbs form. Gradually add ice water until dough holds together. Shape into a disc, wrap, and chill for at least 1 hour.
- Prepare the pear filling: Toss pear slices with sugar, flour or cornstarch, minced crystallized ginger, lemon juice, cinnamon, ground ginger, and salt. Refrigerate briefly.
- Preheat the oven to 400ยฐF (204ยฐC) and line a baking sheet with parchment paper.
- Roll the dough into a 12-inch circle on a lightly floured surface and transfer to the baking sheet.
- Build the galette: Spoon the pear mixture into the center, leaving a 3-inch border. Fold the border over the fruit in pleats and pinch gently to seal.
- Chill the assembled galette for 15โ20 minutes in the fridge to firm the butter.
- Bake for 30โ35 minutes until crust is golden and juices are bubbly.
- Allow to cool for 10 minutes, then serve warm.
Notes
Chill tools and butter on warm days for better dough integrity. Adjust sugar based on the sweetness of pears.
