Ingredients

  • 3 ripe bananas (about 450 g)
  • 113 g (1/2 cup) cream cheese
  • 200 g (1 1/2 cups) all-purpose flour
  • 150 g (3/4 cup) granulated sugar
  • 2 large eggs
  • 60 ml (1/4 cup) vegetable oil
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 150 g (1 cup) chocolate chips

Instructions

  1. Preheat your oven to 180°C (350°F). Line your muffin tin with paper liners or grease it lightly with cooking spray.
  2. Mash the ripe bananas with a fork until smooth. You should have about 450 g of mashed bananas.
  3. In a separate bowl, whisk together the cream cheese and granulated sugar until smooth.
  4. Add the eggs and vegetable oil to the cream cheese mixture. Whisk until well combined. Gradually incorporate the mashed bananas into this mixture.
  5. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  6. Pour the dry ingredients into the wet mixture. Gently fold until no dry flour remains but still slightly lumpy.
  7. Fold in the chocolate chips, ensuring even distribution throughout the batter.
  8. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  9. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean with a few crumbs.
  10. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Avoid overmixing the batter to prevent dense muffins. You can prepare the batter the night before and bake in the morning for fresh muffins.
