Description

A rich and comforting creamy sausage tortellini soup that you can make in just 30 minutes.


Ingredients

  • 1 pound Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 package (9 ounces) cheese tortellini
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • Parmesan cheese, for serving
  • Lemon wedges, for garnish

Instructions

  1. Prep all ingredients by chopping the onion, mincing garlic, measuring out the cream, and washing the greens.
  2. In a large pot over medium heat, brown the Italian sausage until fully cooked, about 8 to 10 minutes.
  3. Add the diced onion and minced garlic, sautรฉing until the onion is translucent, about 3 to 5 minutes.
  4. Deglaze the pot with the chicken broth, scraping up any browned bits from the bottom, about 1 to 2 minutes.
  5. Bring to a gentle boil and add the cheese tortellini, cooking according to package instructions, about 3 to 5 minutes.
  6. Reduce heat to low, stir in the heavy cream, and add the spinach or kale, cooking until wilted, about 2 to 3 minutes.
  7. Season with Italian seasoning, salt, and pepper to taste. Serve in bowls garnished with Parmesan cheese and a squeeze of lemon.

Notes

Feel free to customize the soup with different sausage or pasta types. Leftovers can be stored in the fridge for up to 2 days.
