Description

A refreshing and creamy pasta salad that’s perfect for gatherings and picnics.


Ingredients

  • 300 g (12 oz) rotini pasta
  • 120 ml (ยฝ cup) mayonnaise
  • 60 ml (ยผ cup) sour cream
  • 1 cup finely chopped bell peppers
  • 60 g (ยฝ cup) red onion
  • 1 cup chopped celery
  • A handful of fresh parsley, chopped (optional)
  • Salt, to taste
  • Pepper, to taste
  • A splash of lemon juice

Instructions

  1. Bring a large pot of salted water to a boil. Add the rotini pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a large mixing bowl, combine mayonnaise, sour cream, and lemon juice. Mix until smooth.
  3. Finely chop the bell peppers, red onion, and celery. Add to the bowl with the dressing.
  4. Add the cooled pasta to the bowl and stir gently to combine.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving.

Notes

For added protein, consider mixing in cooked chicken or chickpeas. The salad can be made a day ahead for better flavor.
