- 1 lb Italian sausage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken bone broth
- 2 medium zucchini, diced
- 1 can (14.5 oz) diced tomatoes
- 4 oz cream cheese
- 2 cups fresh spinach
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 bay leaf
- 1/2 tsp cayenne pepper (optional)
- 2 tbsp butter
Instructions
- Gather and prep all ingredients, including chopping onion, garlic, zucchini, and spinach.
- In a large pot over medium-high heat, melt butter and add onion, garlic, and Italian sausage. Cook until browned.
- Pour in the chicken bone broth, add zucchini, diced tomatoes, basil, oregano, bay leaf, and cayenne pepper. Bring to a boil then reduce to a simmer.
- Blend 1 cup of broth with cream cheese until smooth and stir into the soup.
- Mix in spinach until wilted before serving.
- Taste and adjust seasoning with salt, black pepper, or a squeeze of lemon.
Notes
Store in an airtight container for 3-4 days in the refrigerator or freeze for up to 3 months. For a thicker soup, blend more broth with cream cheese.
