Ingredients

  • 1 lb Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken bone broth
  • 2 medium zucchini, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 oz cream cheese
  • 2 cups fresh spinach
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1/2 tsp cayenne pepper (optional)
  • 2 tbsp butter

Instructions

  1. Gather and prep all ingredients, including chopping onion, garlic, zucchini, and spinach.
  2. In a large pot over medium-high heat, melt butter and add onion, garlic, and Italian sausage. Cook until browned.
  3. Pour in the chicken bone broth, add zucchini, diced tomatoes, basil, oregano, bay leaf, and cayenne pepper. Bring to a boil then reduce to a simmer.
  4. Blend 1 cup of broth with cream cheese until smooth and stir into the soup.
  5. Mix in spinach until wilted before serving.
  6. Taste and adjust seasoning with salt, black pepper, or a squeeze of lemon.

Notes

Store in an airtight container for 3-4 days in the refrigerator or freeze for up to 3 months. For a thicker soup, blend more broth with cream cheese.
