Instructions
- Prepare sugared cranberries: In a saucepan, combine water and granulated sugar. Bring to a gentle simmer, add cranberries, and simmer until slightly softened. Toss in remaining granulated sugar and let dry.
- Melt chocolate: Melt white chocolate in a microwave or double boiler until smooth.
- If making choux from scratch: Pipe rounds and bake until golden. For store-bought puffs, ensure they are at room temperature.
- Fill the puffs with your desired filling.
- Dip filled puffs in melted chocolate, coating thoroughly.
- Assemble the wreath by arranging the chocolate-coated puffs in a circular pattern on a serving platter.
- Decorate with sugared cranberries, rosemary, and dust with powdered sugar just before serving.
- Store any components properly up to 3 days and assemble before serving.
