Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup canned cranberry sauce
  • 1/3โ€“1/2 cup fresh orange juice
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon Dijon mustard (optional)
  • 1โ€“2 tablespoons oil
  • Salt and pepper to taste
  • Orange zest from 1 orange
  • Chopped fresh parsley or toasted almonds for garnish (optional)

Instructions

  1. Prep the chicken by patting it dry and seasoning both sides with salt and pepper.
  2. Heat oil in a skillet over medium-high heat until shimmering.
  3. Sear the chicken for 5โ€“7 minutes per side until golden brown. Remove the chicken and let it rest.
  4. In the same skillet, reduce heat and sautรฉ minced garlic/shallot for 1 minute.
  5. Add cranberry sauce, orange juice, honey, Dijon, and salt. Stir and simmer for 3โ€“6 minutes until the sauce thickens.
  6. Return chicken to skillet, spoon glaze over it for 1โ€“2 minutes, then finish with orange zest and garnish.
  7. Slice chicken and serve with rice or vegetables.

Notes

Adjust sweetness by adding more honey or orange juice. Serve with rice or a fresh salad for a complete meal.
