Description

This Cranberry Orange Chicken combines the bright flavors of citrus with sweet-tart cranberries, creating a delicious and budget-friendly dish perfect for weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup canned cranberry sauce
  • 1/31/2 cup fresh orange juice
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon Dijon mustard (optional)
  • 12 tablespoons oil
  • Salt and pepper to taste
  • Orange zest from 1 orange
  • Chopped fresh parsley or toasted almonds for garnish (optional)

Instructions

  1. Prep the chicken by patting it dry and seasoning both sides with salt and pepper.
  2. Heat oil in a skillet over medium-high heat until shimmering.
  3. Sear the chicken for 5–7 minutes per side until golden brown. Remove the chicken and let it rest.
  4. In the same skillet, reduce heat and sauté minced garlic/shallot for 1 minute.
  5. Add cranberry sauce, orange juice, honey, Dijon, and salt. Stir and simmer for 3–6 minutes until the sauce thickens.
  6. Return chicken to skillet, spoon glaze over it for 1–2 minutes, then finish with orange zest and garnish.
  7. Slice chicken and serve with rice or vegetables.

Notes

Adjust sweetness by adding more honey or orange juice. Serve with rice or a fresh salad for a complete meal.
