This Cranberry Orange Chicken combines the bright flavors of citrus with sweet-tart cranberries, creating a delicious and budget-friendly dish perfect for weeknights.

- 4 boneless, skinless chicken breasts
- 1 cup canned cranberry sauce
- 1/3–1/2 cup fresh orange juice
- 1 tablespoon honey (or maple syrup)
- 1 teaspoon Dijon mustard (optional)
- 1–2 tablespoons oil
- Salt and pepper to taste
- Orange zest from 1 orange
- Chopped fresh parsley or toasted almonds for garnish (optional)
Instructions
- Prep the chicken by patting it dry and seasoning both sides with salt and pepper.
- Heat oil in a skillet over medium-high heat until shimmering.
- Sear the chicken for 5–7 minutes per side until golden brown. Remove the chicken and let it rest.
- In the same skillet, reduce heat and sauté minced garlic/shallot for 1 minute.
- Add cranberry sauce, orange juice, honey, Dijon, and salt. Stir and simmer for 3–6 minutes until the sauce thickens.
- Return chicken to skillet, spoon glaze over it for 1–2 minutes, then finish with orange zest and garnish.
- Slice chicken and serve with rice or vegetables.
Notes
Adjust sweetness by adding more honey or orange juice. Serve with rice or a fresh salad for a complete meal.
