Description
A moist and subtly fizzy chocolate cake made with Coca-Cola to deepen flavor and tenderness, topped with a glossy frosting.

- 300 g (2 1/3 cups) all-purpose flour
- 400 g (2 cups) granulated sugar
- 75 g (3/4 cup) unsweetened cocoa powder
- 10 g (2 tsp) baking powder
- 5 g (1 tsp) baking soda
- 6 g (1 tsp) fine salt
- 240 ml (1 cup) buttermilk
- 180 ml (3/4 cup) vegetable oil
- 2 large eggs (about 100 g)
- 240 ml (1 cup) Coca-Cola
- 120 ml (1/2 cup) hot water
- 10 ml (2 tsp) vanilla extract
- 115 g (1/2 cup) unsalted butter (for frosting)
- 300 g (2 1/2 cups) powdered sugar, sifted
- 30 g (1/4 cup) unsweetened cocoa powder (for frosting)
- 60–90 ml (1/4–1/3 cup) Coca-Cola (for frosting)
- Pinch of salt (for frosting)
- 5 ml (1 tsp) vanilla (for frosting)
Instructions
- Preheat the oven to 175°C (350°F). Grease two 9-inch round pans with parchment lined bottoms and dust with flour.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until homogenous.
- In a separate bowl, beat eggs, vegetable oil, buttermilk, and vanilla until blended. Stir in Coca-Cola.
- Pour hot water into the dry ingredients and whisk until cocoa is dissolved.
- Combine wet mixture with dry ingredients, mixing until just combined.
- Divide batter between prepared pans and bake for 30-35 minutes until a toothpick comes out with moist crumbs.
- Let cool in pans for 10 minutes, then invert onto a rack to cool completely.
- Beat softened butter until creamy. Add powdered sugar, cocoa, salt, and Coca-Cola; beat until smooth.
- Assemble the cake by frosting the top of one layer, adding the second layer, and frosting the top and sides. Chill for 20-30 minutes to set the frosting.
Notes
For a gluten-free version, replace all-purpose flour with a gluten-free flour blend. For egg-free baking, use flax eggs.
