Description

A moist and subtly fizzy chocolate cake made with Coca-Cola to deepen flavor and tenderness, topped with a glossy frosting.


Ingredients

  • 300 g (2 1/3 cups) all-purpose flour
  • 400 g (2 cups) granulated sugar
  • 75 g (3/4 cup) unsweetened cocoa powder
  • 10 g (2 tsp) baking powder
  • 5 g (1 tsp) baking soda
  • 6 g (1 tsp) fine salt
  • 240 ml (1 cup) buttermilk
  • 180 ml (3/4 cup) vegetable oil
  • 2 large eggs (about 100 g)
  • 240 ml (1 cup) Coca-Cola
  • 120 ml (1/2 cup) hot water
  • 10 ml (2 tsp) vanilla extract
  • 115 g (1/2 cup) unsalted butter (for frosting)
  • 300 g (2 1/2 cups) powdered sugar, sifted
  • 30 g (1/4 cup) unsweetened cocoa powder (for frosting)
  • 6090 ml (1/4–1/3 cup) Coca-Cola (for frosting)
  • Pinch of salt (for frosting)
  • 5 ml (1 tsp) vanilla (for frosting)

Instructions

  1. Preheat the oven to 175°C (350°F). Grease two 9-inch round pans with parchment lined bottoms and dust with flour.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until homogenous.
  3. In a separate bowl, beat eggs, vegetable oil, buttermilk, and vanilla until blended. Stir in Coca-Cola.
  4. Pour hot water into the dry ingredients and whisk until cocoa is dissolved.
  5. Combine wet mixture with dry ingredients, mixing until just combined.
  6. Divide batter between prepared pans and bake for 30-35 minutes until a toothpick comes out with moist crumbs.
  7. Let cool in pans for 10 minutes, then invert onto a rack to cool completely.
  8. Beat softened butter until creamy. Add powdered sugar, cocoa, salt, and Coca-Cola; beat until smooth.
  9. Assemble the cake by frosting the top of one layer, adding the second layer, and frosting the top and sides. Chill for 20-30 minutes to set the frosting.

Notes

For a gluten-free version, replace all-purpose flour with a gluten-free flour blend. For egg-free baking, use flax eggs.
