Description

Light, fluffy cupcakes bursting with color, perfect for birthdays and festive gatherings.


Ingredients

  • 250 g (2 cups) all-purpose flour
  • 10 g (2 tsp) baking powder
  • 2 g (ยฝ tsp) salt
  • 115 g (ยฝ cup) unsalted butter, softened
  • 200 g (1 cup) granulated sugar
  • 2 large eggs
  • 240 ml (1 cup) buttermilk
  • 5 ml (1 tsp) vanilla extract
  • 150 g (1 cup) rainbow sprinkles

Instructions

  1. Preheat your oven to 180ยฐC (350ยฐF) and line a muffin tin with cupcake liners.
  2. Whisk together the flour, baking powder, and salt in a bowl, then set aside.
  3. Beat together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture, and do not overmix.
  6. Fold in the rainbow sprinkles gently until evenly distributed.
  7. Divide the batter among the lined muffin cups, filling each about 2/3 full.
  8. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Avoid overmixing to prevent tough cupcakes. Can be prepared a day in advance.
