A quick and delicious Brown Sugar Pineapple Chicken recipe that’s sweet, tangy, and caramelized, perfect for family dinners and meal prep.

- 1 lb chicken thighs or breasts
- 1/3 cup brown sugar
- 2–3 tbsp soy sauce
- 1/4 cup pineapple juice (or reserved canned juice)
- 1 can pineapple chunks
- 1–2 tbsp oil
- 2–3 minced garlic cloves
- 1 thumb of grated ginger
- Salt and pepper to taste
- Sliced scallions or cilantro for garnish
Instructions
- Pat chicken dry and season with salt and pepper.
- Heat oil in a skillet over medium-high heat and sear the chicken until golden brown, about 5-10 minutes per side.
- Remove chicken and lower heat to medium. Add oil, garlic, and ginger; sauté until fragrant.
- Stir in brown sugar, soy sauce, and pineapple juice. Allow to simmer until sugar dissolves.
- Add pineapple chunks and simmer to thicken the sauce.
- Return chicken to skillet, spoon sauce over, and simmer until cooked through.
- Remove from heat, garnish, and serve over rice or greens.
Notes
For a lower carb option, serve with cauliflower rice. Adjust sweetness by reducing brown sugar or adding extra acid.
