Description

A quick and delicious Brown Sugar Pineapple Chicken recipe that’s sweet, tangy, and caramelized, perfect for family dinners and meal prep.

Ingredients

Scale
  • 1 lb chicken thighs or breasts
  • 1/3 cup brown sugar
  • 23 tbsp soy sauce
  • 1/4 cup pineapple juice (or reserved canned juice)
  • 1 can pineapple chunks
  • 12 tbsp oil
  • 23 minced garlic cloves
  • 1 thumb of grated ginger
  • Salt and pepper to taste
  • Sliced scallions or cilantro for garnish

Instructions

  1. Pat chicken dry and season with salt and pepper.
  2. Heat oil in a skillet over medium-high heat and sear the chicken until golden brown, about 5-10 minutes per side.
  3. Remove chicken and lower heat to medium. Add oil, garlic, and ginger; sauté until fragrant.
  4. Stir in brown sugar, soy sauce, and pineapple juice. Allow to simmer until sugar dissolves.
  5. Add pineapple chunks and simmer to thicken the sauce.
  6. Return chicken to skillet, spoon sauce over, and simmer until cooked through.
  7. Remove from heat, garnish, and serve over rice or greens.

Notes

For a lower carb option, serve with cauliflower rice. Adjust sweetness by reducing brown sugar or adding extra acid.
