Description

Foolproof chocolate chip cookies with thick, chewy centers and crisp edges, delivering bakery-style quality at home.


Ingredients

  • 300 g (2 1/2 cups) all-purpose flour
  • 1 tsp (5 g) baking soda
  • 1 tsp (5 g) fine sea salt
  • 226 g (1 cup) unsalted butter, cold
  • 100 g (1/2 cup) granulated sugar
  • 220 g (1 cup) packed light brown sugar
  • 2 large eggs
  • 2 tsp (10 ml) vanilla extract
  • 300 g (10 oz) semi-sweet chocolate chips or chopped chocolate
  • Coarse flaky sea salt, for finishing (optional)

Instructions

  1. Whisk together flour, baking soda, and sea salt in a bowl.
  2. Cream together cold butter, brown sugar, and granulated sugar until pale and glossy.
  3. Add eggs one at a time, mixing after each, then stir in vanilla extract.
  4. Pour the dry mixture into the wet and mix until no dry flour remains.
  5. Fold in chocolate chips until well distributed.
  6. Portion the dough into balls and chill for 1 hour.
  7. Preheat the oven to 175°C (350°F) and bake for 9–11 minutes.
  8. Cool on the pans for 5 minutes before transferring to a wire rack.

Notes

Chill dough for better texture and flavor. Can freeze dough balls for up to 3 months.
