- 500 g (1 lb) fresh asparagus
- 100 g (1 cup) asiago cheese, grated
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- Lemon zest (optional)
Instructions
- Preheat your oven to 220ยฐC (425ยฐF).
- Rinse the asparagus under cold water and trim the tough ends, about 1-2 inches from the bottom.
- Lay the asparagus in a single layer on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat.
- Roast in the oven for 10 minutes until tender and slightly crispy at the tips.
- Remove from the oven and sprinkle asiago cheese over the asparagus. Return to the oven for an additional 5 minutes until the cheese melts and bubbles.
- Drizzle with lemon zest if desired and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 175ยฐC (350ยฐF) oven for 10โ12 minutes.
