Ingredients

  • 100 g (ยฝ cup) all-purpose flour
  • 150 ml (โ…” cup) unsweetened applesauce
  • 100 g (ยฝ cup) brown sugar
  • 1 large egg
  • 5 g (1 tsp) baking soda
  • 2.5 g (ยฝ tsp) cinnamon
  • Pinch of salt

Instructions

  1. Prepare the dry ingredients by combining rolled oats, all-purpose flour, baking soda, cinnamon, and salt in a large bowl.
  2. Mix the wet ingredients in another bowl, whisking together applesauce, brown sugar, and egg until smooth.
  3. Combine the wet and dry ingredients gently until no dry flour is visible, being careful not to overmix.
  4. Fill the muffin tin with batter, preheating the oven to 180ยฐC (350ยฐF) beforehand.
  5. Bake in the oven for 18โ€“20 minutes or until golden brown and cooked through.
  6. Cool the muffins in the pan for 5 minutes before transferring them to a wire rack.

Notes

Avoid overmixing the batter to keep muffins light and fluffy. Store in an airtight container for up to 5 days.
