Ingredients

  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 carrots, diced
  • 1 bell pepper, chopped
  • 2 zucchini, diced
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • Salt, to taste
  • Pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, cooking until soft.
  3. Stir in the garlic and ginger, cooking for another minute.
  4. Add the carrots, bell pepper, and zucchini, cooking until just tender.
  5. Pour in the coconut milk and add curry powder, stirring well.
  6. Season with salt and pepper to taste.
  7. Simmer the curry for 15-20 minutes, stirring occasionally.
  8. Serve hot, garnished with fresh cilantro.
