- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 carrots, diced
- 1 bell pepper, chopped
- 2 zucchini, diced
- 1 can coconut milk
- 2 tablespoons curry powder
- Salt, to taste
- Pepper, to taste
- Fresh cilantro, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, cooking until soft.
- Stir in the garlic and ginger, cooking for another minute.
- Add the carrots, bell pepper, and zucchini, cooking until just tender.
- Pour in the coconut milk and add curry powder, stirring well.
- Season with salt and pepper to taste.
- Simmer the curry for 15-20 minutes, stirring occasionally.
- Serve hot, garnished with fresh cilantro.
