Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the strawberry puree.
- Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie with the back of a fork or your hand.
- Bake for 10–12 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for a few minutes.
- Transfer to a wire rack to cool completely, then decorate with icing and sprinkles if desired.
