Description

A classic dessert with tender chocolate cake layers and a glossy coconut-pecan frosting that melts in your mouth.

  • 50 g (1/2 cup) unsweetened cocoa powder
  • 1½ tsp baking soda
  • 1 tsp fine sea salt

  • 113 g (1/2 cup) unsalted butter, room temperature
  • 120 ml (1/2 cup) neutral oil
  • 240 ml (1 cup) buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 120 ml (1/2 cup) hot brewed coffee
  • 200 g (1 cup) evaporated milk
  • 160 g (3/4 cup) granulated sugar (for frosting)
  • 60 g (1/4 cup) unsalted butter (for frosting)
  • 3 large egg yolks, lightly beaten
  • 150 g (1 1/2 cups) sweetened shredded coconut, lightly toasted
  • 100 g (1 cup) pecans, chopped and toasted
  • 1 tsp vanilla extract (for frosting)
  • 170 g (6 oz) semisweet chocolate, chopped (for glaze)
  • 120 ml (1/2 cup) heavy cream (for glaze)
  • 15 g (1 tbsp) unsalted butter (for glaze)

Instructions

  1. Preheat oven to 175°C (350°F) and prepare pans.
  2. Whisk together flour, cocoa powder, baking soda, and salt in a bowl.
  3. Cream butter and sugar in a mixer until pale; add oil.
  4. Add eggs and vanilla, beating well.
  5. Alternate adding dry ingredients with buttermilk; stir in coffee.
  6. Divide batter into prepared pans and bake for 28-32 minutes.
  7. Cool layers in pans for 10 minutes, then invert onto racks.
  8. Toast coconut and pecans until golden.
  9. Make the frosting by combining evaporated milk, sugar, and butter; temper egg yolks, then cook until thick.
  10. Make the chocolate glaze by simmering cream and pouring over chocolate; whisk until smooth.
  11. Assemble the cake by layering with coconut-pecan frosting and topping with chocolate glaze.
  12. Let cool before serving.

Notes

For best results, ensure all ingredients are at room temperature. Make-ahead options suggested for layers and frosting.
