  • 2 tbsp Olive oil
  • 2 Onions
  • 4 Garlic cloves
  • 2 Carrots
  • 2 Celery stalks
  • 2 cups Red wine
  • 2 cups Beef broth
  • 2 tbsp Tomato paste
  • 2 Bay leaves
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • Fresh parsley

Instructions

  1. Season the brisket with salt and pepper generously on all sides.
  2. Brown the brisket in a hot pot with olive oil over medium-high heat until each side is golden, about 4-5 minutes per side.
  3. Cook the onions, carrots, celery, and garlic in the same pot until soft, roughly 5-7 minutes.
  4. Add tomato paste, thyme, rosemary, and bay leaves; stir until well combined, about 1-2 minutes.
  5. Pour in the red wine and beef broth, scraping the pot’s bottom to lift browned bits.
  6. Return the browned brisket to the pot, placing it fat side up nestled among the vegetables.
  7. Cover the pot and bake at 325°F for 3-4 hours.
  8. Rest the brisket once it’s done cooking, then slice against the grain into thick pieces.
  9. Serve with mashed potatoes, roasted vegetables, or buttered noodles.
  10. Garnish with fresh parsley if desired.
