- 3–4 lbs Beef brisket
- to taste Salt
- to taste Pepper
- 2 tbsp Olive oil
- 2 Onions
- 4 Garlic cloves
- 2 Carrots
- 2 Celery stalks
- 2 cups Red wine
- 2 cups Beef broth
- 2 tbsp Tomato paste
- 2 Bay leaves
- 1 tsp Thyme
- 1 tsp Rosemary
- Fresh parsley
Instructions
- Season the brisket with salt and pepper generously on all sides.
- Brown the brisket in a hot pot with olive oil over medium-high heat until each side is golden, about 4-5 minutes per side.
- Cook the onions, carrots, celery, and garlic in the same pot until soft, roughly 5-7 minutes.
- Add tomato paste, thyme, rosemary, and bay leaves; stir until well combined, about 1-2 minutes.
- Pour in the red wine and beef broth, scraping the pot’s bottom to lift browned bits.
- Return the browned brisket to the pot, placing it fat side up nestled among the vegetables.
- Cover the pot and bake at 325°F for 3-4 hours.
- Rest the brisket once it’s done cooking, then slice against the grain into thick pieces.
- Serve with mashed potatoes, roasted vegetables, or buttered noodles.
- Garnish with fresh parsley if desired.
