- 1 cup freeze dried raspberry (for raspberry powder)
- 1 cup white chocolate melting wafers (creates creamy base)
- 1/2 cup heavy cream (high quality recommended)
- 1 cup dark chocolate melting wafers (for dipping)
- 1 tbsp extra freeze dried raspberry (for sprinkle on top)
Instructions
- Add freeze dried raspberry to your food processor and grind it until you have a fine powder. Let it settle for a moment to avoid a cloud of fruit dust when you open it and transfer it to a bowl with the white chocolate melting wafers.
- In a small saucepan, gently heat the cream over medium heat until it starts to simmer but doesn’t boil. Pour this hot cream over the white chocolate and raspberry powder, letting it sit for a few minutes to soften before stirring with a spatula.
- Refrigerate your mixture for 45 minutes to 1 hour, allowing the truffle filling to harden just enough to work with. Use a small ice cream scoop to portion the mix into about 13 pieces.
- Roll each portion into a ball, placing them on a parchment-lined baking sheet. Pop them back into the refrigerator for 1 hour to make them easier to coat.
- Set up a double boiler by placing a heat-proof bowl over a simmering pot of water. Add the dark chocolate and stir gently until it melts completely and is smooth.
- Take each chilled truffle and dip the bottom into the melted chocolate. Hold it on the tip of a fork and use a spoon to drizzle chocolate over the top until completely covered.
- Let any excess chocolate drip off before placing the truffles back on the parchment-lined baking sheet. Repeat this with all truffles, drizzling them with extra melted chocolate and finishing with a sprinkle of crushed freeze dried raspberry for added flair.
- Place the baking sheet back into the refrigerator for 30 minutes to 1 hour to let the chocolate harden completely, resulting in perfectly decadent Raspberry Chocolate Truffles!
