Easy Pear Walnut Cake Recipe: Moist and Delicious Delight

- 3–4 ripe pears, peeled, cored, and sliced
- 100g chopped walnuts
- 250g all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- a pinch of salt
- 125g unsalted butter, softened
- 150g granulated sugar
- 2 eggs
- 100ml milk (or non-dairy alternative)
- lemon juice (for tossing pears)
Instructions
- Preheat your oven to 180°C (350°F).
- Grease a round cake pan (about 23 cm) with butter or line it with parchment paper.
- In a large bowl, combine 250g of all-purpose flour, 1 tsp of baking powder, 1 tsp of cinnamon, and a pinch of salt. Mix well and set aside.
- Peel, core, and slice 3-4 ripe pears. Toss them with a bit of lemon juice to prevent browning and set aside.
- In another large bowl, beat 125g of softened unsalted butter with 150g of sugar until light and fluffy, about 3-5 minutes.
- Add 2 eggs, one at a time, mixing well after each addition until fully incorporated.
- Gradually add the dry mixture to the butter mixture, alternating with 100ml of milk until everything is combined. Do not overmix!
- Gently fold in 100g of chopped walnuts and the sliced pears into the batter, distributing them evenly.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
