Foolproof and irresistible Peanut Butter Cookie Bombs with a molten center, perfect for bakers of all levels.

- 1 cup creamy or crunchy peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 3/4 cups all-purpose flour
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup peanut butter chips
- 1 cup peanut butter cups (for filling)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and light brown sugar until smooth and fluffy.
- Mix in the peanut butter, egg, vanilla extract, baking soda, and salt until combined.
- Slowly add the flour and mix until just combined.
- Fold in the chocolate chips and peanut butter chips.
- Scoop about 2 tablespoons of dough, flatten it in your hand, place a peanut butter cup in the center, and seal it with more dough, rolling it into a ball.
- Place the formed cookie bombs onto the prepared baking sheets, dotting with additional chocolate chips if desired.
- Bake for 18-20 minutes until edges are golden but centers are soft. Let cool before serving.
Notes
Chill the formed cookie bombs if the dough becomes too soft during assembly. Underbaking slightly allows for a molten center.
