  • ¼ tsp black pepper (1 g)
  • ½ cup all-purpose flour (60 g)
  • 2 large eggs, beaten
  • 1½ cups panko breadcrumbs (150 g)
  • 1 tsp Italian seasoning (1 g)
  • ½ tsp garlic powder (1 g)
  • ¼ tsp smoked paprika (optional) (0.5 g)
  • ¼ tsp salt (1.5 g)
  • ¼ tsp black pepper (1 g)
  • Vegetable or canola oil for frying

Instructions

  1. In a large bowl, combine your mashed potatoes, cheese, garlic, egg, chives, salt, and pepper. You want a soft but firm texture that holds its shape when rolled.
  2. Scoop out about a tablespoon of the mix and roll into balls. Line them up on a tray.
  3. You’ll need three bowls: one with flour, one with beaten eggs, and one with your breadcrumb mixture (seasoned with garlic powder, herbs, paprika, salt, and pepper).
  4. Dip each ball in flour, then egg, then breadcrumbs. Make sure they’re fully coated for that crispy finish.
  5. To fry: Heat 2 inches of oil to 350°F and fry in batches for 3–4 minutes until golden and crunchy. To bake: Place on a lined baking tray, spray with oil, and bake at 400°F for 20–25 minutes, flipping halfway through.
  6. Enjoy hot with a dip—garlic aioli, ranch, or even a simple marinara works perfectly.
