Description

A hearty and flavorful lasagna made with layers of fresh vegetables and creamy ricotta cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup marinara sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a skillet and sauté garlic, zucchini, and bell pepper until tender.
  4. Add the chopped spinach and cook until wilted.
  5. Mix together ricotta cheese, sautéed vegetables, and half of the mozzarella cheese in a bowl.
  6. Spread a thin layer of marinara sauce in the bottom of a baking dish.
  7. Layer 3 lasagna noodles followed by a layer of the cheese mixture and marinara sauce.
  8. Repeat the layers until all ingredients are used, finishing with marinara sauce and remaining mozzarella cheese on top.
  9. Bake for 35 minutes or until the cheese is bubbly and golden brown.
  10. Let it cool for 10 minutes before serving.

Notes

Feel free to add other vegetables or spices to customize your lasagna.
