A hearty and flavorful lasagna made with layers of fresh vegetables and creamy ricotta cheese.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups spinach, chopped
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 cup marinara sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Heat olive oil in a skillet and sauté garlic, zucchini, and bell pepper until tender.
- Add the chopped spinach and cook until wilted.
- Mix together ricotta cheese, sautéed vegetables, and half of the mozzarella cheese in a bowl.
- Spread a thin layer of marinara sauce in the bottom of a baking dish.
- Layer 3 lasagna noodles followed by a layer of the cheese mixture and marinara sauce.
- Repeat the layers until all ingredients are used, finishing with marinara sauce and remaining mozzarella cheese on top.
- Bake for 35 minutes or until the cheese is bubbly and golden brown.
- Let it cool for 10 minutes before serving.
Notes
Feel free to add other vegetables or spices to customize your lasagna.
