- 1 cup heavy cream (divided)

- 2 tablespoons water (for gelatin)
- Matcha powder (for dusting, optional)

Instructions
- Melt White Chocolate: In a heatproof bowl, melt the chopped white chocolate over a double boiler or in the microwave in short bursts, stirring until smooth. Let it cool slightly.
- Dissolve Gelatin: In a small bowl, sprinkle the gelatin over the water and let it sit for about 5 minutes to bloom. Then, gently heat it until dissolved.
- Whip Cream: In a mixing bowl, whip 3/4 cup of the heavy cream until soft peaks form. Set aside.
- Mix Matcha: In another bowl, whisk together the remaining 1/4 cup of heavy cream and matcha powder until well combined and smooth.
- Combine Mixtures: Stir the melted white chocolate and dissolved gelatin into the matcha cream mixture until fully incorporated. Gently fold in the whipped cream until no streaks remain.
- Whip Egg Whites: In a clean mixing bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue to beat until stiff peaks form.
- Fold in Egg Whites: Gently fold the whipped egg whites into the matcha and white chocolate mixture until well combined.
- Prepare Molds: If using silicone dome molds, place them on a baking sheet for stability.
- Fill Molds: Spoon or pipe the mousse mixture into the molds, filling them to the top. Smooth the tops if necessary.
- Chill: Cover the molds with plastic wrap and refrigerate for at least 4 hours, or until the mousse is set.
- Unmold Domes: Once set, gently remove the mousse domes from the molds by pressing from the bottom. If they stick, briefly warm the outside of the mold with your hands.
- Garnish: Dust the tops with matcha powder, and garnish with white chocolate shavings and fresh berries if desired.
