Description
A deeply flavored and reliably moist banana bread made with browned butter and ripe bananas.
Ingredients

- 250 g (2 cups) all-purpose flour
- 1 tsp (5 g) baking soda
- 1 tsp (5 g) kosher salt
- 115 g (½ cup) unsalted butter
- 100 g (½ cup) granulated sugar
- 100 g (½ cup packed) light brown sugar
- 2 large eggs (approx. 100 g)
- 3 medium ripe bananas (about 375 g peeled, mashed)
- 60 g (¼ cup) plain Greek yogurt or sour cream
- 1 tsp (5 ml) pure vanilla extract
- Optional: 75 g (½ cup) chopped walnuts or chocolate chips
Instructions
- Brown the butter by melting it in a light-colored saucepan over medium heat for 6–8 minutes until foamy and golden brown.
- Mash the ripe bananas with a fork until mostly smooth and set aside.
- Whisk together the browned butter, granulated sugar, brown sugar, and eggs until glossy.
- Stir in the Greek yogurt and vanilla, then fold in the mashed bananas.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Add the dry ingredients to the wet mixture and fold gently until combined, being careful not to overmix.
- Preheat the oven to 175°C (350°F) and line a loaf pan with parchment paper.
- Pour the batter into the prepared pan and smooth the top before baking for 60–70 minutes.
- Let the loaf cool in the pan for 15–20 minutes before slicing.
Notes
Use very ripe bananas for the best flavor; avoid overmixing to maintain a soft crumb.
