  • 1 tablespoon Lemon Zest (Substitution: Use orange zest or a dash of lemon extract.)
  • 2 large Eggs (Whisk until pale for best results.)
  • 1 teaspoon Baking Powder (Ensure it’s fresh for optimal rise.)
  • 1 cup Raspberry Jam (Substitutions available: Use strawberry, blackberry, or apricot jam.)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 baking pan with butter or line it with parchment paper.
  2. In a large mixing bowl, cream together 1 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add in 2 large eggs and the zest of one lemon to the creamed mixture and beat until well combined, about 1-2 minutes.
  4. In a separate bowl, whisk together 2 cups of almond flour, 1 cup of powdered sugar, and 1 teaspoon of baking powder. Gradually blend this into the wet ingredients using a mixer on low speed.
  5. Take half of the dough and spread it evenly across the bottom of the greased baking pan.
  6. Spoon a generous layer of raspberry jam over the pressed dough, spreading it evenly.
  7. Drop spoonfuls of the remaining dough over the jam layer in a crisscross pattern or crumble it for a streusel-like topping.
  8. Bake in the preheated oven for 35 minutes, or until the top is golden brown and firm to the touch.
  9. Allow the bars to cool completely in the pan for about an hour, then dust with powdered sugar.
  10. Once cooled, cut into squares or rectangles and serve.
