Description

A hearty and flavorful vegetable lasagna packed with fresh ingredients, perfect for vegetarians and pasta lovers.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 2 cups spinach, fresh
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions.
  3. In a mixing bowl, combine ricotta cheese, garlic powder, and Italian seasoning.
  4. Layer 1 cup of marinara sauce at the bottom of a baking dish.
  5. Place 3 lasagna noodles over the sauce.
  6. Spread half of the ricotta mixture over the noodles.
  7. Add half of the spinach, zucchini, bell pepper, and mushrooms.
  8. Sprinkle 1 cup of mozzarella cheese on top.
  9. Repeat the layering process twice, finishing with noodles and sauce.
  10. Top with remaining mozzarella and Parmesan cheese.
  11. Bake covered with foil for 25 minutes, then uncover and bake for an additional 15 minutes or until golden.
  12. Let cool for 10 minutes before serving.

Notes

For an extra cheesy version, add more mozzarella between the layers. Feel free to use any seasonal vegetables you prefer.
