- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 2 cups spinach, fresh
- 1 zucchini, sliced
- 1 bell pepper, chopped
- 1 cup mushrooms, sliced
- 2 cups marinara sauce
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions.
- In a mixing bowl, combine ricotta cheese, garlic powder, and Italian seasoning.
- Layer 1 cup of marinara sauce at the bottom of a baking dish.
- Place 3 lasagna noodles over the sauce.
- Spread half of the ricotta mixture over the noodles.
- Add half of the spinach, zucchini, bell pepper, and mushrooms.
- Sprinkle 1 cup of mozzarella cheese on top.
- Repeat the layering process twice, finishing with noodles and sauce.
- Top with remaining mozzarella and Parmesan cheese.
- Bake covered with foil for 25 minutes, then uncover and bake for an additional 15 minutes or until golden.
- Let cool for 10 minutes before serving.
Notes
For an extra cheesy version, add more mozzarella between the layers. Feel free to use any seasonal vegetables you prefer.
